what exactly does in ring psychology mean

i always thought bret hart had it, the way he targets body parts, but what about a hogan or jake roberts

does it mean how you target your wrestler and how everything you do makes sense, or how you interact with the crowd

How well you tell the story of the match.
It's a bit of everything really, making a solid match.

telling a story.
keeping the fans on the edge of their seat.
Not random spots at random times, ie; Angle currently in TNA.

You basically got it right here. Take Christian/Rhodes Smackdown match from last week and how Christian sold the arm injury throughout the match and his injury played a role in him not being able to apply a move he was able to defeat Rhodes with in the past and win the title. Rhodes took advantage of Christian's injury and won the match. That's basic but good psychology.
HHH, Taker and HBK at mania is a fantasic example of in ring psychology
I look at it as doing stuff during the match that makes sense. Like in a big blood feud grudge match ending in a cage. Both guys hate each other and are ready to kill each other. If instead of doing that they both try to escape over and over that's an example of bad psychology. Take the cage match Punk and Hardy had right before Jeff left WWE. The title was on the line and if Jeff lost he would have to leave WWE. It was good psychology to go for the escape over and over instead of trying to kill each other.
