I just started watching wrestling again and I feel way out of the loop. Could you give me some matches to put me up to speed, and the best ones to watch from the start of 2011 till present. I just need to get back into it

I think you should probably watch:

Every PPV - Just to get the main events of what's gone on.

The Summer of Punk - Beginning on Raw 27/6/11, main storyline of last year.

The last few Raws and Smackdowns just to get right up to date.

I agree with all of these EXCEPT the bolded. The bolded matches mostly all suck.

Add Punk vs Bryan Over The Limit and The SD MITB from 2011 and 2012, take off the bolded, and that list is perfect. Also watch CM Punk's promos from June 2011-September 2011 and The Rock's return and his promos

Watch Punk vs. Bryan OTL 2012. An all-time five star classic wrestling contest. Epic match that shows great wrestling still does draw crowds into the match.

Don't watch Cena vs Lesnar from Extreme Rules 2012. God awfully bad match. If you value your sanity, don't watch it, otherwise your head will explode from the lack of logic surrounding the booking of the finish.

Start with Punk's shoot promo from June 2011, watch up to Money in the Bank, and stop at Summerslam, because things with Punk really just go completely downhill from there.

Punk vs Bryan from OTL 2012 is good but past that its junk, especially since AJ gets involved and turns it into shit.

Nothing Cena has done in 2012 has been any good, skip that entirely.

Watch Damien Sandow, he's been great. Dolph Ziggler from MiTB 2012 up to the present has been great.

Taker and Hunter from WM27 and 28 were excellent matches, definitely worth watching. Their WM28 match is my MOTY candidate right now.

Other than that, I strongly recommend watching TNA right now. They're putting out a very solid, intelligently booked product. If you can't tell I'm not very enthusiastic about the current WWE, in fact, I think its pretty crap. Some bright spots here and there, but overall its very poor in my eyes.
