I recently rewatched both Wrestlemania matches and I was kind of surprised at how tedious I found Undertaker/Edge until it neared the home stretch. My memory of it the past couple of years was a lot better than the match itself was, actually. It's still all right but it's not a great match, and the entire Edge/Undertaker feud and their matches was/were never truly all that. Their matches just haven't aged well. They're always solid, always engaging, never truly great.
Undertaker/Batista from the previous year is just a great absolute heavyweight war. The little touches do it for me, too. The way Batista tires and his punches have less effect late in the match. The way Undertaker underestimates Batista at a couple of critical junctures. It was all fitting to the story they were telling. And their series was phenomenal. The feud was better, more substantial, more "even" in its booking, and not to mention vastly more successful with regards to $$$.
