I remember one of my encounters with Giants and Mammoths, it didn't end well for me. I attacked a group of them, mainly just for fun. Took out the two Giants and had a few Mammoths running after me and got to an area surrounded by streams and rocks. I thought I had got away from them until I realised I had got stuck between some rocks, almost like I had fallen a little bit through the floor, as I turned round I saw a Mammoth running full speed at me. Lights out...
And, yeah. If you really love this game you'll be spending countless hours playing it. Also, if you do play a few play troughs, which you probably will be, try and use all the different play styles. Most games I just stick with Stealth and Archery. But there's also Magic, Potions, Poison, Power etc.. So don't limit yourself.

You dont necessarily need to finish ALL the quests on all characters , in my case im doing all side quests and stuff on the character i found most interesting to play (mage with heavy armor , what you could call battle mage) and only doing more interesting ones on other character which is Alik'r warrior (1handed and light armor + some magic) . Also dont forget to mess with difficulty settings , at first i was playing with default one which is Adept i believe and i was skeptical about increasing the difficulty but now im playing on the hardest one which is Master if i recall correctly and its a blast , way more interesting .

Yeah, I'm playing on the 2nd highest difficulty as standard, going up to the highest if I start breezing through a dungeon. It definitely helps my armour rating.

I need to get round to starting a mage playthrough on this game, it annoyed me when I leveled out most of the magic skills in my soldier playthrough, unlocked some really cool two handed spells from the college of Winterhold only to realise that I didn't have enough magic to use them.

Thats when enchanting becomes so huge. My first character was a Master in Destruction and Conjuration and I couldnt even perform any adept to master spells. With enchanting you really dont even have to use perk points anymore to half magic used in any tree. Right now I have gear that reduces the cost of restoration so I can literally walk with an unlimited Greater Ward which makes enemy mages useless.

What Soup says is gold. Heed it. Enchanting is the strongest tool in the game. You can enchant a ring and a necklace and a head piece and when you cast a spell it wouldn't even drain a drop of your magicka. I use that on my assassin character. I can stay invisible constantly. It's amazing really.
It's not quick...there are steps you gotta do to make your Enchanting that strong but it's fun to work yourself up to that.

I enchanted a dagger, if I kill people with it within 4 seconds, I can capture their soul (the 30x sneak bonus helps there). I then use the soul gems to charge the dagger. It feels a little pointless.
I know enchanting is something I need to work on. I still don't have a great grasp of how it works, I may save it for a mage playthrough.

You can use those gems to make better gear as well... if you're enchanting is high enough and so is your potion making. Those two are the keys to making great gear. And once you get the double enchant perk you're fucking bossing. 
Right now, if a dragon lands a dragon dies almost immediately. That's how powerful my one handed character is. It's amazing what enchanting can do.
