So I recently upgraded my MacBook Pro hard drive and am using the old one was an external. I was browsing over the external and found the old library files, preferances etc. but I was wondering what can I delete (to free up the space) without totally fucking up other parts of it? Or without it affecting other files?

If you're able, just transfer what you want to keep to your new internal drive, then format your old drive and use it purely as an external. You won't need to keep anything on it after that except whatever files/folders you transfer over yourself. Mac's disk utility can do that for you-- if you need a walk through (it's really easy) let me know and I can PM a link.
