I could be here all day so I'll just do the first few that pop into my head.
It's not a cover, per se, since Maiden did the original as well, but when it was made, Bruce Dickinson had left the band and the original was made with Blaze Bailey on vocals, making this a cover of sorts. Thank God it was recorded because Bruce gave the song life. Blaze is just an appalingly bad vocalist, especially for the Maiden style.
Judas Priest cover. I can't stand the original.
AC/DC cover. Love AC/DC but I like this better.
Dylan cover. Original's fine and all, just prefer this one.
Black Sabbath cover. WAY better than the original. The Black Sabbath version, instead of Ozzy singing like he usually does, has this song performed with some weird, fucked up speaker to achieve the effect he ended up singing with. It just isn't right.
