Husker Du's version of 8 Miles High smokes the Byrds
The Pogues version of ...And The Band Played Waltzing Matilda is definitive but its a folk song and original isnt well known so not sure if counts.

dont think its better than original but Im pretty fond of Ryan Adams version of Maiden's Wasted Years
