Linda Ronstadt's version of Desperado blows the original by The Eagles out of the water:



The Paul Butterfield Blues Band's version of Mystery Train takes an already great blues song by Junior Parker and turns it in to a masterpiece:



Warren Zevon's version of Knockin' on Heaven's Door, while I wouldn't call it "better" than Dylan's version, holds a special place in my heart because of the circumstances surrounding the cover. He found out he was dying to a rare form of lung cancer and wanted to finish his last album, and he included this cover on said album, which won him the only two Grammies of his 30+ year career - posthumously.

The Great Pretender is a song that has a ton of great versions. My personal favorite version is by The Band, from the album Moondog Matinee(1973)



Sam Cooke also did a great version on the album Hits of the 50's(1960)

I liked Will Smith's cover of Just The Two Of Us better than the original by Marvin Gaye. Will's version is a beautiful, moving tribute to his son (not Jaden).




His version was parodied in Austin Powers: The Spy Who Shagged Me and by Eminem, who made a very dark parody of the song (97 Bonnie & Clyde).
