The best wrestling psd sites are all posted in this thread, your better off just cutting the pic out. It's really good to get into the habit of cutting images out yourself, so you don't just rely on psds to make graphics.

If you want to change the background of an image, then your best bet is to cut out the image paste it on an empty canvas and start adding lighting effects etc. from there. I don't think you can just change the BG from the image directly, unless you paint over it which can be difficult depending on the image.
