Despite having held the title for shorter I have to say that to me Sheamus comes across as the more credible champ.

To me the the difference is that Sheamus looks like a champ. When Sheamus goes up against big guys he looks like he belongs there.

And no disrespect to Punk but no matter how hard WWE try and push him. When he is going up against the likes of Cena and kicking out of FU's it still doesn't feel right.

I think the issue with "credibility" comes down more to booking. Sheamus has been booked as basically unstoppable, which makes him credible.
For the first part of Punk's reign, he was playing the guy who'd stand up to anyone and overcome them. He was definitely "credible." Now, they've essentially turned him into the Miz, so Sheamus is obviously going to look stronger by comparison.

a tough choice considering both have held their respective belts for a while. Punk comes off more as a credible champion because he has had more 4 star matches than Sheamus

Both are very credible. I know Punk is barely escaping with the title in the last months since he turned heel, but that's the role of a good heel, unless you are called Brock Lesnar, Big Show, Mark Henry(among other monsters). Sheamus is the unstoppable champion who takes on every challenger and looks strong against anybody, face Punk was the person who dealt with anyone and managed to beat anyone, heel Punk is the champion that finds the way to keep the title and what he "loses" in the ring(in terms of dominance), he makes up with the mic.

I don't even consider Sheamus a champion at this point. Mainly because everytime he gets in the ring, it's (0.)Chest Pump 1. Brogue Kick. 2. Pin. 3. Non-profit.

Sheamus may get a lot of shit for his cheesy phrases, no-selling of promos and general overexposure to get fans on his side, but the guy has been a part of some cracking matches. Punk has been putting on tremendous matches consistently during his reign, but now he's a heel, he is clinging on to that title like his life depends on it.
