I agree with OP and he is spot on. Look at the return of Brock Lesnar, he bloodied Cena and they had a real extreme match at ER. Why are Sheamus and Del Rio not allowed to have a match like this? And before the response "if that happens in every match it would not feel special", they fought against each other 200 times on PPV, at least one time they could make it extreme to create a memorable moment in their boring and bland feud.
Cena's mouth was bloody after the attack of Lesnar and they showed the replay 10 times in the show. Randy Orton attacks Cody Rhodes with a ring bell, busts him open and they censor it and remove videos from YouTube.
Not censoring would help Cody a lot because all the fans who dislike him would say that he is maybe too skinny, too bland, has only a job because he is a Rhodes but he can take a beating like a real man and a real wrestler and he earned respect of some people.
Yes, the hypocrisy exists and the current wrestlers are really held down. The Vince vs. Punk main event was more extreme than all the Hell in a Cell matches we had in the PG era

An interesting thread! The question would be if Steve Austin, The Rock, Mick Foley and HHH were getting started today would they get over?
Austin wouldn't be able to flip the bird and drink beer, The Rock wouldn't be able to write his own promos, no hardcore matches for Foley and HHH could forget his infamous sledgehammer!!
So the answer is probably no they wouldn't be able to get over nowadays....

And what is your point? Of course people jizz their pants when the legends show up, just like when a legendary singer releases a new album or when a Hollywood legend makes a cameo appearance. That has nothing to do with this thread, Undertaker, Triple H and The Rock became legends also thanks to the freedom to do what they want but the current booking and the new rules what are obviously only for the new wrestlers prevent them to have a holy shit memorable moment.

I agree with the OP as well...but there is a drawback, which I will get into a bit later.
For example, take The Undertaker vs. Triple H match at WM 28. HIAC, it was about 30-40 minutes long, lots of brutal moments and near falls. Why not make a Sheamus-Del Rio match go along the same routine? Steve Austin made himself a bonafide superstar at Wrestlemania 13 thanks to a blistering match with Bret Hart, but more importantly, he was free to show what he was capable of. I say give some of the current roster a chance to really take it to the next level. Show the fans that they are willing to put their body on the line at any cost. At the moment, they're just going through the motions and not many people give a shit.
But yes, there is a disadvantage of if you give two competitors free reign to do whatever they want, then the rest of the roster will chime in to the higher-uppers saying that they would like the same. Sooner or later, you'd end up having a more frustrated locker room, all trying to outdo each other, with more saturated events full of violence, drama and intrigue. Sounds good at first, but you can have too much of a good thing. I say give it a try though, it can't hurt.
Whenever somebody says anything about bringing back more brutal matches, people automatically assume CZW-level shit. There's a middle ground. Just throw in some blood in big matches that're being sold as brutal (ex: Brock Lesnar vs. HHH) to emphasize the hate/brutality. Not askin for Mick Foley-type shit, jus a bit of blood whenever it can enhance the selling of the match, nahmean? Plus a rougher style could fit Wade Barrett's bare-knuckle boxer n Sheamus' tough Irishman gimmicks.
