for me the 2 that comes to mind at the moment is:

The Rock vs Stone Cold vs The Undertaker vs Kane Steel Cage Match RAW 1998

Kane & Steve Austin & The Undertaker vs Kurt Angle & The Big Show & Triple H WWF MSG Show (Mar '01)

any other particular ones?

I would have loved to have seen a proper television style presentation of the Daniel Bryan dark match from the night after Wrestlemania. Bryan was so fucking over that night, would be really cool to watch.

If I recall correctly it was Bryan, Kane & Rhodes vs. Sheamus, Orton & Big Show

Wish there was a way to watch the house show I went to in November 1992 (my first show). It was shortly after Bret won the Title for the first time, because he had a match with Ric Flair. Also, Undertaker vs. Papa Shango (terrifying), Tatanka vs. Nails, Razor Ramon vs. someone, and can't remember the rest.

Bryan vs Mysterio was supposed to have happened on WWE's overseas tour to Japan this summer, that definitely springs to mind for a more recent example.

The long herladed Flair vs Murdoch Broadway that was supposedly lost forever will forever remain my #1 though.
