When Undertaker retires, what match type do you think should be his last match? He's been involved in a lot of great ones:

Hell In a Cell
Buried Alive
Casket Match
No Holds Barred
Boil Room Brawl etc.

Personally I would like to see him go out on one of his iconic match types like the Buried Alive match (how sick would it be to see UT bury Cena alive??). I would take the casket match too.

Would you have him go out on a special match type or just beat someone in a regular singles match?

I'd say a No Holds Barred Buried Alive or No Holds Barred Casket match would be suiting out of those options. Taker already did Hell in a Cell recently and Buried Alive/Casket are classic matches that would be perfect for him before retiring. Maybe toss an inferno match in there for good measure.

I think just a normal match to be honest. At least a match where you have to win by pinfall or submission. It adds more drama and would result in a bigger climax rather than someone just shoving dirt into a grave or shutting a casket door.

Normal match at WrestleMania against John Cena. Have him win, but can't leave on his own. Have druids carry him out in a casket.

Just a normal match would be too boring for a last match for someone of Undertaker's caliber. Calaway's character is too theatrical. Anything that would make Taker go out with a bang works for me.

The Inferno Match is a hot mess (pun entirely intended), and Buried Alive and Casket matches are "no holds barred" by definition.

Honestly, almost no one leaves WWE with a victory, because it's good business to pass your accumulated heat on to the person that beats you. I'd bet dollars to doughnuts that Triple H, Undertaker, Rock, and Brock Lesnar will all lose their last match in WWE, as Shawn Michaels, Ric Flair, and many others have done.
