Aside from the ones already mentioned, I'd say Carnivale. Beautifully directed and filmed, fantastic cast, well written with a gripping story, and an outline of 6 seasons that may have made it one of the most ambitious and epic in scale ever. The romance of magic rushing head-on to a final confrontation with the crushing practicality of the nuclear weapon, set in the Depression-era dustbowl.
Unfortunately, high production costs and low ratings lead to HBO cancelling it, same as Deadwood. I still love watching it, but the last episode now has a feel of 'what could have been', rather than the 'what happens next' it deserves.
I was annoyed when Family Guy was cancelled originally, and the news of it returning was welcome. It just never felt the same, and I can't say I've enjoyed an episode in years. Now I just don't watch it.
