Other favorites of mine apart from Fullmetal Alchemist include Death Note, Elfen Lied, Gungrave and Black Lagoon.
Edit: How could I forget Claymore?

Aside from Bleach I really enjoy Cowboy Bebop, Trigun, Ghost in a Shell:Stand Alone Complex, Claymore, Blacker Than Dark, and Witch Hunter Robin.
Just to name a few.

Witch Hunter Robin annoyed me to no end. I could never really get into it.
Ghost in the Shell is alright.
Trigun is a much better Manga. They get away with more.

I somewhat agree with this. Cowboy Bebop was a good show no doubt, but IMO it could have been better if they focused more on the main storylines and diverged less. To me the main storyline felt a bit rushed.
There's no denying the fact that the show oozed with style. I especially loved the opening.
Knocking On Heaven's Door (the Cowboy Bebop movie) was dissapointing though. The plot did nothing for me.

Bleach isn't that great until they start the Soul Society Arc and sadly the greatness ends with the Soul Society Arc. the Bount arc is horrible and the Hueco Mundo arc is good, but not to the caliber of the Soul Society arc and honestly wish i would have stopped watching once the Soul Society arc stopped.
Naruto is one of the most satisfying animes i've ever seen tho. everything up until episode 135 is great. Zabuza arc, the Chuunin Exam arc and Sasuke's departure arc are all brilliant. especially the Sasuke Departure arc. i was completely wowed at the fight between Kyuubi Naruto and 2nd limit Sasuke. after that, 85 episodes of filler was overkill and really killed the series for me. Naruto Shippuuden started out strong with the re-introduction episodes, Naruto/Sakura vs. Kakashi fight, and Gaara's kidnapping, but since then, it's been so drawn out and boring even tho Sasori is a great character and the fights about "what art truly is" between him and Deidara are a lot of fun.

Death Note.
37 episodes of the best writing, animation, art, music, action, dialogue, set pieces, and drama ever in any anime. the episodes "Manic" and "1.28" are the best episodes i've ever seen...anywhere. they just blew me away at how amazing they were.
if you haven't seen Death Note, WHAT THE FUCK IS WRONG WITH YOU! go over to mininova.org and start downloading them!
after Death Note tho, Elfen Lied, Gungrave, Fullmetal Alchemist, Trigun, Berserk, Fist of the North Star, The Melancholy of Haruhi Suzumiya, Full Metal Panic!, Uchu Kaizoku Captain Harlock, Neon Genesis, Evangelion, FLCL, Oh My Goddess!, and Naruto.
now if this was about movies, i'd hate you all for not naming anything but Hayao Miyazaki, Yoshiaki Kawajiri, or Katsuhiro Otomo movies.
edit: everything i watch is subbed. i will go crazy if it's dubbed, unless it has Spike Spiegel's voice actor. i forget his name. he also did Mugen in Samurai Champloo.

Soul Society arc was money.
The Bount arc was a complete filler arc. Nothing at all about Bounts was ever addressed in the manga.
The arrancar arc is going to be great, it's not even near completion. Though, I am quite disappointed that there has been so many filler episodes the past 7 weeks.
FLCL: This is a great anime. Even though it only has 5 episodes, I feel it has a great replay value.\
Full Metal Panic!: I really get into this for a while. It was the only thing I watched. It kinda dried up on me though. Great anime non the less.
Elfen Lied: After the reviews I have been given on this anime, on this board. It's pretty much mandatory that I check it out. It's absolutely on my to watch list.
Fist of the North Star: I really haven't gotten too far into this one. I pretty much got side tracked while trying to watch it.
Evan: One of the first series I watched. <3 for this series and it has a big nostalgia factor for me.
The rest I have either already reviewed or I haven't seen, or I possibly forgot.
Anime is just like American Television shows, in the aspect that there are many different sub-genres. People also have very different tastes.
EDIT: Also, I am currently downloading Death Note, based on your recommendation.

I watched the first season of Full Metal Panic! after a friend recommended it to me. To be honest I don't see what the big fuss what about. I probably didn't enjoy it much because I'm not a fan of Mecha.
I've heard a lot about FLCL so I'll probably be watching that soon myself.
Death Note and Elfen Lied are great. You won't be dissapointed.

FLCL is only 5 episodes. You could watch it in a few hours.
You seriously need to watch it. From getting to know you, though, I am not sure it's exactly your type of anime.
