The knowing Punk personally thread, while turning into a joke thread, had a lot of great stories in it, here are some of my Punk stories that didn't make the cut:
1) He's my postman
2) I'm the caretaker for his swimming pool when he's on the road
3) He lives in my basement
4) I taught him everything he knows about wrestling
5) He was in my high school math class but he got kicked out for cheating off me.
Moral of the story: Everyone needs to laugh every once in a while.

....You're on the Internet. Just search his name. No one has to be a hype man and state why he's held in such regard and whatever we say shouldn't convince you. Do research, watch videos and make your own assessment.
A kilt is the most ridiculous outfit ever when part of his gimmick was embracing his Scottish heritage?

Not only was he a good brawler, he was a legendary talker. Roddy Piper set the example of being the annoying, sh** talking detestable heel you paid good money for to see him to get his ass kicked!
He was The Miz of his time, but actually got nuclear heat by pushing the envelope with some of the things he would say!

Roddy Piper is a legend on the mic, he could make a feud with Giant Gonzalez look interesting. The guy personified charsima and had an insane amount of energy.

On Saturday mornings, as a kid, you wanted to see the big names or at least the updates of what they had recently done. You would watch the mid-card matches because that was what they showed you. But whenever Hot Rod had something to say, you paid attention. I was as big a mark for Hulk Hogan as any other kid my age back then, but it was Roddy Piper who taught me how to properly appreciate a good heel.
If you can, track down the promos leading up to his match with Kamala.
The hardest I ever laughed as a child.

Go watch John Carpenter's They Live. Carpenter was one of the best director's of the 80s and They Live is easily the best movie that a WWE wrestler has every starred in. Great flick.

Piper was just so vital to the business as a whole. The Piper's Pit concept has been attempted by a ridiculous number of wrestlers over the years, yet none of them have ever really matched the sheer memorability of the original. Piper's segment with Jimmy Snuka is one of the most widely-remembered moments in the history of the business to this day. Nobody's gonna be saying "Remember that one edition of MizTV from back in the day? Man, that was the moment that made me love wrestling." Granted, I don't think MizTV is very good, but even the better modern-day talk shows (The Highlight Reel, The Peep Show, The Cutting Edge etc.) will never reach that level of remembrance.
Plus Piper was a major part of making the WWF/E, Hulk Hogan, and Wrestlemania into the phenomenons they ended up becoming. Of course, as the central hero, Hogan was always the centerpiece, but a good hero is nothing without a good villain. Not only did Hogan have a good villain, he had a GREAT one in Piper, and nobody else could've been a better fit... Well, maybe Jake Roberts could've fit the role as well (altho he'd have a much darker take on it, of course), but think of it this way: if the ONLY OTHER PERSON that could've filled your shoes is Jake Roberts, you're obviously fucking amazing at what you do.
I do think that some people kinda overstate Piper's sheer greatness at times. Not that he isn't great, but I disagree when someone says that nobody has or ever will touch him as a heel. Regardless, anyone could make a very legitimate argument for him as the G.O.A.T. heel and micworker.
tl;dr: Innovater, MAJOR factor in the rise of pro wrestling, god on the mic

Anything from his feud with Adonis. The Flower Shop vs Piper's Pit. Was a very underrated feud and showed another side to Piper.
As for matches I would go with the common answer, the Hollywood Backlot Brawl with Goldust. Classic stuff, especially with Piper updating us about how he's chasing the guy around town.

Not only did he influence the talk show aspect of pro wrestling but guy was the first true anti-hero ( a heel to be cheered by the fans), which paved the way for the Austins & Rocks of the world.
Not to mention he helped make Hogan a great face.
