For me it typically depends on what genera of fantasy. I'm a huge fan of "devine" creatures. Aasimars are my favorite from D&D, Draenei from WoW and Ainur(Gandalf) from LOTR. They are too human like, for a creature more animal like, I'd have to say the Minotaur is a absolute bad ass, especially if you give them some armor and an axe.
After watching that animal planet mocumentary on mermaids changed my perspective a lot on what they would look like if they were real.

Centaurs because I used to play warcraft 3 a hell of a lot as a kid and I could never get past the level where you had to kill Cenarius.

I have... A thing about mythological creatures, so I don't have a solid favorite, I honestly have a list, perhaps a long list if creatures I like.
Werewolf: Not to be mistaken with Twilight wolves (which by the way, cemented my absolute loathing of vampires, make no mistake, Twilight wasn't the reason, but the final nail in the coffin, so to speak) I'm from the Sega genesis days, where games like Shining Force and Altered Beast made Werewolves powerful warrior like beings.
The Phoenix family: the Phoenix legend always fascinated me. A fiery bird that can set itself on fire and reincarnate in the ashes. Granted, my fascination started, not surprisingly, from Shining Force, it quickly grew once I learned more about its legend. I learned about it's eastern counterpart, that is apparently the ruler of birds (not to be mistaken with the Vermillion Bird of the South) and even its predecessor of sorts, Bennu, which may be the bird the Phoenix originate from. Really, just a cool bird to look up, because it's like a catalyst for learning about a wide array of mythical birds.
Yuki Onna: The snow woman, this is a creature that both facinates me, and scares me. While the ghostly legend varies, the one that grabs me is that she is a being who lures men into frozen oblivion. Kinda like a Siren combined with a vengeful ghost mix.
Kitsune and Kumiho: I love both creatures. Fox are notorious tricksters in the mythological realm, and these two easily take dominance. While the Kitsune is a bit more in the mischievous Side of things (though no less vicious,) the Kumiho is downright mean and deadly.
Black Dogs: I love black dog legends. Essentially, black dogs split into two jobs, forewarners of death, and guardians of hell. I like both jobs, but guardians interest me though it is used less than the forewarner side of things.
That's just some of my tabs, I could go on and on.
