It's almost guranteed that Epilogue/Prologue characters die.
As for Winds of Winter's prologue. I'm putting my money on Balon Swann hunting down Darkstar, only to meet his end, whilst Darkstar reveals some pretty awesome secrets to us. A nice epilogue for Winds for me, would be a flashback of when Ned spent the his final hours in the Black Cells, thinking over everything that's happened and revealing a lot of the series most discussed secrets.

The flashback:
Syrio Forel finally found the Lord of Winterfell sitting in his dungeon cell. The beaten man looked up.
"Syrio?" Eddard said. "Where is my daughter? Where is Arya? Is she safe?"
"Your daughter escaped King's Landing alive and well." The Braavosi man said. "And so will you."
Syrio Forel spun around and looked at Eddard. Eddard had an unmistakable look of shock on his face.
"It's like looking in a mirror no?" Syrio said. "Go, now, follow that path. Say 'no' to the Lord of Death."
