Start from the King of the Ring 1996 when Austin 3:16 was born and WWE became more edgy, thanks to the change in the writing team.
The Brian Pillman gun incident is something you should not miss. Pillman and Austin were great friends, had a great chemistry together starting from their WCW days and they had great segments mid 96-mid 97 like the Shitman promo or when Austin attacked Pillman's leg.
I suggest that you should start watching June 1996
