I don't play Inferno matches too often but I think once the flames hit 500 you have to hold both left and right triggers and pull them towards the flames. You should get a winning cutscene from it to end the match.
Hopefully that's right, I've been in the exact same position as you when playing an inferno match against a friend of mine, they really don't make it obvious haha.
