Defending myself isn't really a tell for me either, it just depends on my mood. People accused me a few times in AGOT and not once did I ever respond or mention any accusations. Then I play games as town and defend myself way too much. It's why I think meta is silly. Nobody plays the same way every game. Yeah, there are always gonna be some tells people do but you should never 100% rely on them for reads.
